This is a great muffin recipe because it has to be made ahead and can sit in the fridge for up to 6 weeks but it's never lasted that long in our house. It's very moist and super healthy. Perfect when reaching for a quick snack to keep you going. Right Lou! For you. Enjoy!
Best Bran Muffin
makes 3 dozen
1 c. All Bran cereal
1 c. boiling water
½ c. butter, room temperature
1½ c. white sugar
2 eggs
2 tsp molasses
2 c. buttermilk*
2½ c. all purpose flour
1½ Tbsp. or 4½ tsp of baking soda
1½ tsp. salt
2 c. bran flakes
1 c. raisins
- Pour boiling water over All Bran and let stand (until cooled) .
- Cream butter, sugar, eggs and molasses. Add buttermilk and then all bran mixture. Stir until blended.
- Stir together flour, baking soda and salt. Add to wet mixture and mix.
- Add bran flakes and raisins and fold until just moist. Transfer to a 3 quart container with a lid.
- Chill 1 day or up to 6 weeks covered in fridge.
- Spoon into greased muffin tins and bake 375℉ for 15 to 20 minutes.
2 c. milk with 2 tsp of vinegar
